Sigtuna is Sweden


We think that good ingredients should be protected and not burned. Therefore, the chefs at Sigtuna and Arlanda hotels samples cooked chicken. All to inspire more people to cook and to help restore the chicken. Welcome to a discussion of wastage, to taste chicken and to share new recipes!
At all times Hen been a prized dish on our table. Not least through the classical law Hens Curry. Today it is hard to find chicken in the stores and are rarely spray and forget found on the restaurant menu. Meanwhile burned around 1 million chickens raised every year instead of being taken advantage of. But now the chicken on the way back - and it is organic. Excellent, we think.

WHY we care about chickens? The simple answer is that we do not want good food commodities should be destroyed. Since 2009 we have in Sigtuna worked around sustainability issues and we know that wastage is a major problem in our society. EPA estimated in 2012 that it generated as much as 1, 2 million tons of food waste in Sweden, equivalent to 130 kg per person. Restaurants accounts for just over a tenth of that. To now be involved and ensure that chickens are utilized is another way we want to contribute.
Every year we consume nearly 2 billion eggs in Sweden. We eat them cooked, fried, poached, in pancakes and omelettes. Life as hen's pretty hard but thanks to Astrid Lindgren's struggle in the 1980s is the worst excesses of egg production gone. Today, all hens access to perches and dust bathing and the ecological also have the opportunity to go out. 6 million hens will lay as many as 300 eggs each per year.
